吃太多白米,會提高罹患糖尿病與失智症的風險

糖尿病是阿茲海默型失智症的危險因子,其成因雖然也有遺傳性體質的因素;但糖尿病其實與飲食生活、運動不足、肥胖等生活習慣有很大的關係。在預防糖尿病的飲食生活當中,特別要注意的就是「醣類」。

含有大量醣類的食物,有砂糖等糖類、小麥和米等穀類以及薯芋類。而我們亞洲人除了以米飯為主食外,也很喜歡麵包或麵類,因此容易會有醣類攝取過量的傾向。近年來根據研究調查得知,吃太多白米會提高罹患糖尿病的風險。在日本、中國、美國和澳洲這4個國家中,都已有不少調查白米消耗量與糖尿病發病風險的研究。而在日本人的調查結果中發現,白米攝取量較多的人比攝取量少的人,其糖尿病的發病風險,男性為1.19倍,女性為1.65倍。

經常聽到有人說「沒吃到白飯,感覺就像沒吃飯一樣」,這其實是一種中毒症狀。尤其是精製過的「白色醣類」,比未精製的中毒性又更高。除了白米之外,烏龍麵、吐司麵包、砂糖也都是精製過的泛白醣類。為了預防攝取過量的白色醣類,請試著利用未精製的糙米、大麥或黑麥麵包等來取代。

糙米本來就是GI值比白米低的食物。而且,將糙米做成精米時所去除的「米糠」中,不僅有維生素和礦物質, 還含有一種稱為阿魏酸(Ferulic acid)的多酚。laennec根據醫學研究結果指出,這種阿魏酸具有抑制認知功能降低的效果。就這一層意義而言,食用帶有米糠的糙米比白米對人體更有益。
